I&#8217;ve also been spurred on by the recent blog by Helen of the <a target=\"_blank\" href=\"http:\/\/www.actuallymummy.co.uk\/2016\/02\/17\/perfect-low-carb-pizza-recipe\/\">low carb Fat Head Pizza recipe<\/a> I&#8217;ve been making for years, maybe I&#8217;ll put up my version next.<\/p>\n<p>Being Easter this cheesecake had to feature Cadbury&#8217;s Mini Egg per slice, raising its carb content but well worth it.<br \/>\n<img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/circles-of-blue.winchcombe.org\/wp-content\/uploads\/2016\/03\/10-easter-cheesecake.jpg\" alt=\"10-easter cheesecake\" width=\"900\" height=\"600\" class=\"alignright\" \/><br \/>\n<br \/>First things first, always make sure you&#8217;ve got the right ingredients, don&#8217;t do as I did. I&#8217;d also say that this cheesecake is a great base and regularly we will add fruit toppings to it, although to keep the carb content down single cream is a perfect addition.<br \/>\nThis Chocolate Brownie Cheesecake recipe was developed by Carolyn from All Day I Dream About Food, an excellent site for all things Low Carb. <a target=\"_blank\" href=\"http:\/\/alldayidreamaboutfood.com\/2013\/02\/brownie-cheesecake-low-carb-and-gluten-free.html\">Here&#8217;s the original recipe<\/a>.<\/p>\n<h3>Carbs, carbs, carbs<\/h3>\n<p>With the right ingredients this should work out at <strong>roughly 4g carbohydrates per slice<\/strong> (according to the original recipe).<br \/>\nMy version above with its incorrect ingredients and toppings was more like 8g.<\/p>\n<h3>The ingredients<\/h3>\n<p><img decoding=\"async\" src=\"http:\/\/circles-of-blue.winchcombe.org\/wp-content\/uploads\/2016\/03\/1-cheesecake-ingredients.jpg\" alt=\"1-cheesecake ingredients\" width=\"600\" class=\"aligncenter\" \/><\/p>\n<div style=\"float:left;\">\nChocolate Brownie base:<br \/>\n90g butter<br \/>\n60g unsweetened or dark chocolate<br \/>\n40g almond flour<br \/>\n15g cocoa powder<br \/>\n70g of <a target=\"_blank\" href=\"https:\/\/authoritynutrition.com\/erythritol\/\">erythritol<\/a> sweetener<br \/>\n2 large eggs<br \/>\ndash of vanilla essence<br \/>\n(optional) 40g of chopped pecans or hazelnuts<br \/>\n(optional) pinch of salt\n<\/div>\n<div style=\"float:left; margin-left: 30px;\">\nCheesecake filling:<br \/>\n454g Philadelphia\/cream-cheese<br \/>\n60g erythritol sweetener<br \/>\n45g double cream &#8211; Elmlea works fine<br \/>\n2 large eggs<br \/>\ndash of vanilla essence\n<\/div>\n<h3 style=\"clear:both;\">Ingredients options<\/h3>\n<p><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/circles-of-blue.winchcombe.org\/wp-content\/uploads\/2016\/03\/2-use-the-correct-chocolate.jpg\" alt=\"2-use the correct chocolate\" width=\"450\" height=\"300\" class=\"alignright size-medium wp-image-4298\" srcset=\"https:\/\/circles-of-blue.winchcombe.org\/wp-content\/uploads\/2016\/03\/2-use-the-correct-chocolate.jpg 900w, https:\/\/circles-of-blue.winchcombe.org\/wp-content\/uploads\/2016\/03\/2-use-the-correct-chocolate-300x200.jpg 300w, https:\/\/circles-of-blue.winchcombe.org\/wp-content\/uploads\/2016\/03\/2-use-the-correct-chocolate-225x150.jpg 225w, https:\/\/circles-of-blue.winchcombe.org\/wp-content\/uploads\/2016\/03\/2-use-the-correct-chocolate-150x100.jpg 150w\" sizes=\"auto, (max-width: 450px) 100vw, 450px\" \/>If only I&#8217;d checked the cupboards before deciding to make this cheesecake I would have noticed my stash of unsweetened or plain chocolate had disappeared. So a higher-carb substitute had to be used. In theory the darker the chocolate the less you have to use so darker is better in my opinion.<br \/>\nThe use of salt is optional, I don&#8217;t think it makes much difference.<br \/>\nThe use of nuts is optional, I quite like the added texture for the base but it can change the flavour substantially and Amy prefers it without.<\/p>\n<h3 style=\"clear:both;\">Preparing the base<\/h3>\n<p><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/circles-of-blue.winchcombe.org\/wp-content\/uploads\/2016\/03\/3-cheesecake-base-mixture.jpg\" alt=\"3-cheesecake base mixture\" width=\"450\" height=\"300\" class=\"alignright\" \/>First, switch the oven on to 160C (fan) (325F, Gas mark 4).<br \/>\nIn a microwave melt the chocolate for 15 seconds until it softens slightly, then add butter and microwave for a few more seconds until you can mix them together easily.<br \/>\nIn a separate bowl mix the almond flour, cocoa powder and salt.<br \/>\nIn a large bowl beat eggs, then add the erythritol and vanilla. Mix until smooth.<br \/>\nMix in the almond\/cocoa mixture, then the chocolate mixture, then add the nuts (if you want to).<\/p>\n<h3 style=\"clear:both;\">Baking the base<\/h3>\n<p><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/circles-of-blue.winchcombe.org\/wp-content\/uploads\/2016\/03\/4-base-ready-to-bake.jpg\" alt=\"4-base ready to bake\" width=\"450\" height=\"300\" class=\"alignright\" \/>Turn the mixture into a greased 9 inch springform pan.<br \/>\nShake the pan to get the mixture flat.<br \/>\nBake for 15 minutes whilst you make up the topping.<\/p>\n<h3 style=\"clear:both;\">Mixing up the topping<\/h3>\n<p><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/circles-of-blue.winchcombe.org\/wp-content\/uploads\/2016\/03\/5-cheesecake-top-mixed.jpg\" alt=\"5-cheesecake top mixed\" width=\"450\" height=\"300\" class=\"alignright\" \/>In a large bowl mix up the cream cheese until smooth.<br \/>\nAdd beaten eggs, or do what I do and push the cream cheese to one side of the bowl and beat the eggs in the other.<br \/>\nMix throughly the cream cheese and eggs, add in erythritol, cream and vanilla.<\/p>\n<h3 style=\"clear:both;\">A baked base<\/h3>\n<p><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/circles-of-blue.winchcombe.org\/wp-content\/uploads\/2016\/03\/6-base-baked.jpg\" alt=\"6-base baked\" width=\"450\" height=\"300\" class=\"alignright size-medium wp-image-4302\" srcset=\"https:\/\/circles-of-blue.winchcombe.org\/wp-content\/uploads\/2016\/03\/6-base-baked.jpg 900w, https:\/\/circles-of-blue.winchcombe.org\/wp-content\/uploads\/2016\/03\/6-base-baked-300x200.jpg 300w, https:\/\/circles-of-blue.winchcombe.org\/wp-content\/uploads\/2016\/03\/6-base-baked-225x150.jpg 225w, https:\/\/circles-of-blue.winchcombe.org\/wp-content\/uploads\/2016\/03\/6-base-baked-150x100.jpg 150w\" sizes=\"auto, (max-width: 450px) 100vw, 450px\" \/>After 15 minutes the base should look like this.<br \/>\nReduce the oven to 140C (fan) (300F, Gas mark 4)<br \/>\nLet the base cool for 15 minutes.<\/p>\n<h3 style=\"clear:both;\">Putting it all together<\/h3>\n<p><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/circles-of-blue.winchcombe.org\/wp-content\/uploads\/2016\/03\/7-cheesecake-ready-to-bake.jpg\" alt=\"7-cheesecake ready to bake\" width=\"450\" height=\"300\" class=\"alignright\" \/>Spoon the filling onto the base and shake pan to even it out.<br \/>\nPlace in oven for 35 minutes.<\/p>\n<h3 style=\"clear:both;\">All baked<\/h3>\n<p><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/circles-of-blue.winchcombe.org\/wp-content\/uploads\/2016\/03\/8-cheesecake-baked.jpg\" alt=\"8-cheesecake baked\" width=\"450\" height=\"300\" class=\"alignright\" \/>After 35 minutes the topping should move slightly when you give the pan a slight shake. If it moves a lot put it back in the oven.<br \/>\nNote that the top isn&#8217;t flat but it will sink back down.<\/p>\n<h3 style=\"clear:both;\">A finished cheesecake<\/h3>\n<p><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/circles-of-blue.winchcombe.org\/wp-content\/uploads\/2016\/03\/9-cheesecake-finished.jpg\" alt=\"9-cheesecake finished\" width=\"450\" height=\"300\" class=\"alignright\" \/>Remove from oven and let cool.<br \/>\nRun a knife around the pan to loosen the edge.<br \/>\nRemove pan sides.<br \/>\nCool in fridge for a couple of hours.<\/p>\n<h3 style=\"clear:both;\">An Easter version<\/h3>\n<p><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/circles-of-blue.winchcombe.org\/wp-content\/uploads\/2016\/03\/10-easter-cheesecake.jpg\" alt=\"9-cheesecake finished\" width=\"450\" height=\"300\" class=\"alignright\" \/>Just to make this one slightly more suitable for Easter I added one Cadbury&#8217;s Mini Egg, adding a whopping 2g carbs to each slice.
